Chef demo – 1pm on Saturday

Originally from Cornwall, Michelin-starred chef Tom Brown honed his skills in restaurants across the South West, including Rick Stein’s, before meeting two-Michelin-starred Nathan Outlaw. He joined Outlaw’s team at the St Enodoc Hotel in Rock, quickly rising through the ranks to become Head Chef. After three years, Tom moved to London to lead Nathan’s eponymous restaurant at The Capital Hotel in Knightsbridge, where he successfully retained its coveted Michelin star.

In April 2018, Tom opened his debut restaurant, Cornerstone, in Hackney Wick. The 46-cover restaurant showcased his signature style—simple, seasonal, and produce-driven cooking. The frequently changing menu has featured dishes such as Pickled Oyster with Cucumber, Horseradish, and Dill; Cured Gurnard with Roast Onion Dashi, Chili, Black Olive, and Anchovy; and Hake Kyiv with Chanterelle & Cep Butter, Cauliflower. The restaurant’s open kitchen served as both a focal point and a counter-bar, seating eight guests.

Tom has received numerous accolades throughout his career. At the 2018 National Restaurant Awards, he was named ‘Chef to Watch’, while Cornerstone was awarded ‘One to Watch.’ The restaurant went on to win ‘Best New Entry’ in the 2019 Good Food Guide, ‘Breakthrough Chef of the Year’ at the Food & Travel Reader Awards, and ‘Best Newcomer’ at the Observer Food Monthly Awards.

Tom gained national recognition when he competed on Great British Menu, representing the Southwest. His dish, Poor Man’s Goose, was selected as the main course for the 2018 banquet celebrating 70 years of the NHS. He later returned as a guest ‘Veteran Judge’ on the show’s 14th series.

In 2019, Cornerstone ranked #3 on the National Restaurant Awards’ Top 100 list. The following year, Tom was named British GQ Chef of the Year 2020 and won The Cateys’ Best Newcomer Award. On January 24, 2021, after a challenging year for the hospitality industry, Tom achieved a career milestone—Cornerstone was awarded its first Michelin star, which it successfully retained in the Michelin Guide Great Britain & Ireland 2022. In 2023, the restaurant was also listed in the Harden’s Guide Top 100 Restaurants in the UK.

Continuing his expansion, Tom opened Pearly Queen, an oyster bar and restaurant in Shoreditch, in November 2023. After six successful years, Tom closed Cornerstone in June 2024. In April 2025, Tom returned to Knightsbridge, where he first made his name, with his flagship restaurant, Tom Brown at The Capital.
