Stewart is originally from Marazion, Cornwall. He trained with Raymond Blanc at Le Manoir aux Quat’Saisons and with Michael Caines at Gidleigh Park. As Head Chef at Hunstrete House in Bath, Stewart was awarded his first Michelin star and 3 AA Rosettes.

He took over the Victoria Inn, Perranuthnoe in March 2006 with his wife Anna and over the 8 or so years of running the business, made it one of the most successful pubs in the county with a number of awards, accolades and recognition from all the major food guides, culminating in a Michelin Bib Gourmand in 2013 and 2 AA Rosettes the following year.

The couple opened the Square at Porthleven in 2012 and sold the Victoria Inn in December 2014 to concentrate on The Square.

Head chef Bryok has been at The Square since November 2012 – he joined as Sous Chef and was promoted to Head Chef in April 2013.

Bryok was born and educated in Cornwall, went to Cardiff University and gained BSc. Hons in Industrial Chemistry.

After starting work at a busy pub in Fulham in London, Brtok was asked to help out in the kitchen and eventually asked if he could run the kitchen himself. He then went on to work at a number of pubs/restaurants in the South East before returning to Cornwall in 2009. Bryok worked as Sous Chef at Untitled by Robert Wright in Penzance, helping to open the new restaurant.

Both Stew and Bryok have a great love of food and have great fun creating amazing dishes using the best of the seasonal, local ingredients Cornwall has to offer.

The Square was awarded a BIB Gourmand in the 2016 Michelin Guide.
