As Sharp’s Brewing Co partners with Porthleven Food Festival to launch the brand-new Chef’s Table masterclass space, we caught up with Sharp’s sommeliers Ed Hughes and Sam Lynes to talk all things beer, food pairing, and what visitors can expect from their lively programme of events.

First things first – tell us about the Chef’s Table. Its new, what can people expect?

Ed: The Chef’s Table is something we’re really proud to be part of. It’s a more intimate space where people can get closer to the action – whether that’s learning new cooking techniques, hearing directly from top chefs, or discovering how beer can elevate food.

Sam: Exactly. It’s not just demonstrations – it’s interactive, relaxed, and packed with personality. You’re not just watching; you’re part of the experience.

You’ve both worked extensively with beer – what excites you most about bringing that to Porthleven Food Festival this year?

Sam: As Ed and I are both proud members of the Guild of Beer Sommeliers we think that beer is incredibly versatile, and I think people are still surprised by that. At a food festival, you’ve got this amazing range of flavours already, so it’s the perfect place to show how beer can complement, contrast, cut and cleanse with dishes.

Ed: And it’s fun! There’s no pretension. We want people to feel confident experimenting – whether that’s pairing a crisp pale ale with seafood or something darker with rich meats.

One of your sessions is Scales, Tails, Chops & Hops. What can people expect?

Ed: It’s going to be a great mix of skills and storytelling. I’ll be joined by chefs Stephane Delourme and Henk de Villiers, and we’ll be diving into everything from fish seasonality to choosing the right cuts of meat.

Sam: It’s practical too. You’ll come away knowing what to ask your fishmonger or butcher, how to make the most of ingredients, and – of course – what beers to pair with them.

You’re also hosting a live podcast—tell us more about that.

Ed: The Sharp’s Private Podcast is a one-off session, which makes it really special. We’ve got an incredible lineup of chefs – Porthleven’s own Jude Kereama, of Kota & Kota Kai, Mick Smith from Porthminster Beach Kitchen in St Ives, and Hylton Espey from Culture in Falmouth – talking about everything from sustainability to the challenges facing the industry.

Sam: And because it’s a small group, the audience can actually get involved, ask questions, and be part of the conversation. It’s a rare chance to hear such honest insights from people at the top of their game. Nobody else will hear this intimate chat, as just like listening to your favourite podcast this will be aired live, only once through our Sharp’s Headphones.

The Saucy Cupboard Cook-Off sounds like a lot of fun…

Sam: It really is! You’ve got Chris Eden (executive chef of Watergate Bay Hotel) and Guy Owen (executive chef of Idle Rocks Hotel) sharing tips on sauces, marinades, and salads – things people can actually use at home.

Ed: And then we throw in the wildcard – a surprise bag of ingredients for a live cook-off. It gets competitive, creative, and usually pretty hilarious.

And finally… the Beer Quiz. What’s the vibe?

Ed: Pure fun. No pressure, just a good laugh.

Sam: Expect a mix of beer trivia, food and drink quiz rounds, and maybe a few curveballs. Whether you’re a beer geek or just there for a good time, it’s a great way to round off the day.

Ed: And yes – there’ll be a Sharp’s beer in hand and plenty of prizes while you play.

What’s one thing you hope visitors take away from your sessions?

Sam: Just to view beer differently, its been around so long I think we’ve forgotten to give it the respect it deserves. Whether that’s pairing beer with food or using beer as an ingredient- just enjoy it and experiment.

Ed: And be curious. Whether it’s trying a new style of beer, asking more questions at the market, or cooking something different at home – that’s what it’s all about.
